If you cook your vegetables before eating them, be sure to cook them whole, then chop or slice them after cooking. This preserves more of the nutrients than if you slice them before cooking. Of course, ideally you'll eat (or drink) some raw, living vegetables throughout the day as well (because cooking vegetables destroys many of their medicinal nutrients).
